Method
1.Cook pasta in a large saucepan of boiling, salted water, following packet instructions. Drain, reserving about 1 cup of cooking liquid.
2.Meanwhile, heat 2 tablespoons olive oil in a large frying pan on medium. Saute kumara for 5-6 minutes, until almost tender.
3.Add remaining oil, mushrooms and oregano to pan and saute for 6-8 minutes, until mushrooms are soft and kumara tender. Stir in spinach. Cook a further 1-2 minutes, until wilted.
4.Transfer pasta and parmesan to pan. Toss with enough pasta cooking liquid to moisten. Serve sprinkled with extra parmesan.
