Method
1.Cut papayas in half, remove seeds with a spoon and cut flesh into thin strips, reserving juice while cutting. Place papaya in large bowl.
2.Add papaya juice, tomato, coriander, lime juice, fish sauce, chilli and sugar, then toss gently to combine. Check seasoning, adding a little more sugar, fish sauce or lime juice if necessary.
3.Scatter with roasted peanuts and extra coriander. Serve.
