Method

1.Lightly grease 2 baking trays. Sprinkle yeast over combined water and oil in a jug. Stand for 5 minutes, until foamy. Sift together flour and salt into a large bowl.
2.Pour yeast mixture into flour. Mix to a soft dough. Turn out on a lightly floured board. Knead for 10 minutes, until dough is smooth and elastic.
3.Place in a lightly greased bowl. Cover with a tea towel. Stand in a warm place until doubled in size (about 45 minutes). Preheat oven to 220°C.
4.Punch down dough with fist to release gas. Knead for a few minutes. Divide dough in half for pizzas. Press or roll out to form 2 x 30cm circles. Place on baking trays.
5.Spread each with sauce and top evenly with pancetta and mozzarella. Bake for 10-15 minutes, until golden. Top with rocket and drizzle with a little olive oil, if desired. Serve immediately.

This is ciabatta dough – to make ciabatta Loaf, shape into an oval and place on a greased tray. Double in size before baking for 25-30 minutes. Makes 2 pizza bases or 1 loaf
