Oven–baked smoked paprika fries

It’s amazing what a little smoked paprika can do to the humble potato. To keep the Spanish theme going finish them off with garlic and parsley and serve with fried eggs.

Ingredients

Method

1.Preheat oven to 190°C.
2.Peel the potatoes and cut into fat fingers. Wrap them in a clean cloth and leave to dry for 15–30 minutes.
3.Transfer potatoes to a shallow ovenproof dish lined with baking paper, drizzle with oil and sprinkle with salt and paprika. Use the paper to move the potatoes around to coat them with oil and seasoning.
4.Cook potatoes in the preheated oven for about 1 hour, turning once or twice, or until golden. Serve hot.
5.To finish with garlic and parsley, chop both ingredients together with a large knife. When potatoes are ready, stir through the chopped garlic and parsley and return potatoes to the oven for 2-3 minutes until they smell fragrant and the garlic is sizzling.
