Method

1.Preheat oven to hot, 200°C. Line a baking dish with foil or baking paper.
2.Arrange chicken in a single layer in dish. In a small bowl, combine marmalade, juice, butter, mustard, syrup, oil and garlic. Brush liberally over chicken.
3.Bake 35-40 minutes, turning once, until cooked through (juice will run clear when tested with a skewer).
4.Meanwhile to make maple veg; line an oven tray with baking paper. Mix carrots, parsnips, syrup and oil together. Spread in a single layer on tray Season to taste. Bake with chicken. 25-30 minutes, until lightly golden and tender.
5.Serve chicken with vegetables and drizzled pan juices. Accompany with salad leaves.
