Orange chicken with mash

Fluffy mashed potato and char-grilled chicken is topped with a zesty orange gravy in this simple, speedy dinner.

Ingredients

Method

1.Place potato in a large saucepan; cover with cold water. Bring to the boil. Boil for 12 minutes or until tender. Drain; return to pan. Place over low heat. Add milk and butter; mash until almost smooth. Season.
2.Meanwhile, preheat a char-grill to moderately nigh. Combine ¼ cup of the juice and the garlic in a glass or ceramic bowl. Add chicken; toss to coat. Spray chicken with oil. Char-grill chicken, turning regularly, for 10 minutes or until cooked.
3.Whisk gravy powder and 1 cup boiling water in a heatproof jug; stand for 2 minutes (gravy should thicken). Stir in zest and remaining juice. Divide mashed potato among serving plates. Top with chicken. Serve with gravy and spinach.

For extra flavour, marinate chicken for up to 2 hours.
