Method
1.With a small knife, trim mushroom stems at an angle. In a large saucepan, bring vinegar, wine, water and bay leaves to boil. Add mushrooms and salt. Simmer on low heat 10 minutes. Drain in a colander, reserving bay leaves. Using a spoon to prevent bruising, spread mushrooms stem side down on a dry tea towel to cool.
2.Fill sterilised jars with mushrooms, bay leaves and garlic. Cover with oil, pressing down on mushrooms with back of a spoon to release any air. Seal and store in a cool, dark place.
This is an excellent way to use pearly white button mushrooms when you can find them.
