Method
1.Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper.
2.Combine frozen vegies, spice mix and almonds on prepared tray. Top with butter. Bake for 15 minutes or until golden. Serve with yoghurt, topped with extra almonds.
Stir the cooked vegetable mixture into couscous for a more substantial side. Serve with roast or grilled lamb.
