Coffee buttercream

Method

1.Preheat oven to 160°C/140°C fan forced. Line two baking trays with baking paper.
2.Using an electric mixer, beat butter and sifted icing sugar in a bowl until light and creamy. Sift flour, cornflour and cocoa powder over creamed mixture; stir to combine.
3.Using floured hands, roll heaped teaspoons of mixture into 40 balls. Place, about 5cm apart, on prepared trays, flattening slightly with a floured fork. Bake, swapping trays halfway through cooking, for 15 minutes or until golden. Cool on trays.
4.To make coffee buttercream; dissolve coffee in 1 tablespoon boiling water in a heatproof jug.
5.Using an electric mixer, beat butter and sifted icing sugar in a bowl until light and creamy. Beat in enough coffee mixture to produce a thick icing.
6.Cool as recipe directs. Sandwich biscuits with buttercream. Serve.
