Ingredients

Broad bean topping
Caramelised onion and blue cheese topping

Method

1.Preheat oven to hot, 200°C. Line an oven tray with baking paper.
2.Arrange bread slices on prepared tray. Brush with oil. Bake for 5-10 minutes, until golden. Set aside.
3.BROAD BEAN TOPPING: Mash all ingredients together. Season to taste.
4.CARAMELISED ONION and BLUE CHEESE TOPPING: Heat oil in a small frying pan on medium. Saute onion for 3-4 minutes, until tender. Stir in vinegar and sugar. Cook, stirring, for 1-2 minutes, until golden. Cool slightly.
5.Spoon bean topping onto half the toasts. Drizzle with extra virgin olive oil and garnish with mint leaves.
6.Spread cheese over remaining toasts, and top with caramelised onions.
