Method
1.Shell and devein prawns, leaving heads and tails intact. Combine prawns, juice, oil, garlic and mint in large bowl, season. Cover; refrigerate 30 minutes.
2.Thread prawns onto eight metal skewers. Cook skewers on heated oiled grill plate (or grill or barbecue) until prawns are changed in colour.
3.Serve skewers with lemon wedges, serve, if you like, with chopped fresh mint and extra virgin olive oil.
