Method

1.Preheat an oven-grill to moderately high. Combine mince, onion and mint in a bowl. Season. Divide mince mixture into 8 equal portions. Firmly shape each portion around a skewer, forming a log shape. Place kofta on a greased baking tray. Grill, turning occasionally, for 10 minutes or until browned and cooked.
2.Meanwhile, heat oil in a saucepan over moderate heat. Add spice mix; cook and stir for 30 seconds or until fragrant. Add rice; cook and stir for 1 minute. Stir in tomatoes and 1 1/2 cups water. Simmer, stirring occasionally, for 10 minutes or until liquid has been absorbed and rice is just cooked.
3.Cook beans in a saucepan of boiling water for 2 minutes or until tender. Drain. Combine zest, juice and yogurt in a bowl. Season. Spoon tomato rice and beans onto serving plates. Top with kofta. Sprinkle with extra onion, then extra mint. Serve with lemon yogurt.

You can buy all-season spice mix in the spice aisle. If unavailable, use any spice combination, such as Moroccan, Middle Eastern or Italian. Try chicken, lamb or pork mince instead of beef mince. Price will vary.
