Mini chicken and mozzarella prosciutto-wrapped meatloaves

An everyday dish gets a gourmet upgrade with this meatloaf recipe. Chicken mince, mozzarella and prosciutto come together to create delicious mini meatloaves that are perfect for lunch or dinner

Method

1.Preheat oven to moderate, 180°C. Line a large oven tray with baking paper.
2.In a large bowl, combine mince, breadcrumbs, onion, egg and basil. Season and mix well.
3.Shape ½ cups of mixture into log shapes. Top each with a mozzarella slice and wrap in a slice of prosciutto (secure with a toothpick if needed). Arrange on tray, seam-side down.
4.Bake for 25-30 minutes until cooked. Cool on tray for 5 minutes. Serve with salad and bread.
  • If desired, add some chopped semi sun-dried tomatoes to mince mixture before moulding.
