Method
1.To make salsa, combine ingredients in a bowl.
2.Combine oil, beef, onion and paprika in a bowl. Heat a large frying pan on high. Cook beef mixture in batches, stirring occasionally, for 2-3 minutes, until just cooked through.
3. Meanwhile, heat mini tortillas according to packet directions.
4.To assemble fajitas, top tortillas with lettuce, avocado, beef mixture and salsa. Carefully fold tortillas to enclose filling and secure with paper, if you like. Serve with yoghurt.
