Antipasto pizza
1.Preheat oven to 220°C or 200°C fan forced. Grease 2 baking trays.
2.Place pita bread on prepared trays; spread with pizza sauce. Sprinkle with parmesan. then top with salami, eggplant, artichoke, capsicum and olives.
3.Arrange mozzarella slices over pizzas, then bake for 10-12 minutes or until bases are crisp. Serve sprinkled with basil.
You can use any marinated vegetables, such as mushrooms, zucchinis and sun-dried tomatoes. Serve on garlic bread or bruschetta.
