Mexican tortilla stack

Mexican tortilla stack recipe that children will love and that takes less than 30 minutes to cook. This recipe combines chicken mince, tortillas, a tomato-based sauce, grated cheese and served with sour cream.

Method

1.Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper. Heat oil in large frying pan over moderate heat. Add mince; cook. stirring with a wooden spoon to break up lumps, tor 5 minutes or until browned. Add seasoning; mix well. Add 1/3 cup water and beans. Reduce heat; simmer, uncovered, for 5 minutes or until sauce has thickened.
2.Place a tortilla on prepared tray: spread with one-third of mince mixture. Top with 1/2 cup cheese. Top with another tortilla, one-third of mince mixture and 1/2 cup of cheese. Repeat layer. Top with remaining tortilla and sprinkle with remaining cheese. Bake for 15 minutes or until golden.
3.Cut stack into quarters. Top with tomato and coriander. Serve with sour cream.

Save the leftover burrito seasoning and sprinkle it over potatoes before baking.
