Method
1.Heat olive oil in a large frying pan on high. Saute the onion and garlic for 2-3 minutes until onion is tender.
2.Add ground cumin and ground coriander and smoked paprika. Cook, stirring, for 1 minute. Add beef mince.
3.Cook for 4-5 minutes, breaking up lumps with the back of a spoon, until browned. Stir in the tomato pasta sauce and Mexican beans. Simmer gently, stirring, for 5-10 minutes (adding a little water, if required). Season to taste.
4.Top with a little sour cream and coriander leaves. Serve with cooked rice and corn chips.
Try topping with a salsa of chopped tomato, avocado, chives and a squeeze of lemon.
