Method
1.Tear bread into pieces and place in a bowl with enough milk to almost cover. Soak 10 minutes. Squeeze bread to remove excess milk; crumble into a large bowl. Discard milk.
2.Meanwhile, heat a frying pan on high. Cook spinach 2 minutes, until wilted. Drain, squeeze out excess water and cool completely. Chop coarsely.
3.Add spinach to bread with beef mince, parmesan and egg. Season and mix well. With wet hands, shape into 12 balls. Dust with flour, shaking off any excess.
4.Heat oil in a large non-stick frying pan on medium. Cook meatballs 15 minutes, tossing frequently, until browned and cooked through.
5.Meanwhile, heat beans gently in a pan on medium. Add extra oil. Season with pepper, to taste. Toss beans gently. Divide beans between serving plates. Top with meatballs and serve with shaved parmesan.
Chill the mince mixture for 30 minutes first to make it easier to shape into meatballs.
