Method
1.Combine mirin, marmalade and soy sauce in a small bowl. Soak noodles in boiling water in a heatproof bowl for 1 minute. Stir to separate strands. Drain.
2.Heat oil in a large frying pan over high heat. Cook fish 2 minutes, or until golden. Turn fish; add half the mirin mixture. Cook 2 minutes or until fish is cooked. Transfer to a plate. Cover with foil to keep warm. Add remaining mirin mixture, noodles and sesame oil to pan; cook, stirring, until heated.
3.Meanwhile, blanch buk choy in a saucepan of boiling water until bright green. Drain well. Serve fish on noodles with buk choy and extra soy sauce.
Fish is cooked when it flakes easily using a fork. Mirin is Japanese sweet rice wine. You’ll find it in Asian food aisle or Asian grocery store. lf unavailable, use sweet sherry or a sweet white wine.
