Method

1.Preheat oven to 200°C/180°C fan forced. Combine mustard and maple syrup in a small bowl. Place sausages, in a single layer, on a baking tray. Drizzle sausages with maple syrup mixture; turn to coat. Bake for 20 minutes or until sausages are cooked.
2.Bring a large saucepan of water to the boil. Add cabbage; simmer, uncovered, for 5 minutes or until tender. Drain. Set aside.
3.Place apple and parsnip in a medium saucepan; cover with cold water. Bring to the boil; boil for 10 minutes or until tender. Drain. Process apple mixture, butter and milk until smooth. Season with salt.
4.Combine caramelised onion, cornflour and stock in small saucepan over moderate heat: cook and stir for 2-3 minutes or until sauce boils and thickens. Slice sausages thickly. Serve with mash, cabbage and onion mixture.
