Method

1.Combine mustards, syrup and juice in medium bowl; add cutlets, turn to coat in mixture, season.
2.Cook cutlets on heated oiled barbecue (or grill or grill pan).
3.To make apple salad; whisk mayonnaise, mustard and juice in medium bowl, add apple; toss to combine. Add lettuce and celery; toss gently.
4.Serve cutlets with salad.

Sprinkle with nuts, season to taste.
