Method
1.Preheat oven to 200°C. Lightly grease 2 baking trays.
2.Slice potato into 3mm round slices, lengthways, discarding end pieces. Place slices on prepared tray. Brush with oil. Bake for 8-10 minutes each side, until tender and golden. Cool slightly.
3.Spread each with tomato paste. Sprinkle with cabanossi, pineapple and cheese.
4.Bake for 5-6 minutes, until golden. Cool slightly before serving.
