2.Preheat oven to 200°C (180°C fan-forced). Line a baking tray with baking paper. Place kumara in a microwave-safe bowl. Microwave on High (100%) for 5 minutes or until tender. Mash until smooth. Cool slightly.
3.Add lentils, apple, cheese and egg to kumara in bowl; mash together until combined. Using damp hands, shape level tablespoons of mixture into 24 patties. Roll in breadcrumbs to coat.
4.Transfer crumbed patties to prepared tray. Spray with oil. Bake, turning once, for 10 minutes or until patties are golden. Serve with Corn Salsa.
