Method
1.In a food processor combine onion, honey, lemongrass and garlic. Process to a rough paste. Add fish sauce and pepper to taste.
2.Place sliced beef in bowl and rub paste all over to coat. Cover and marinate 1 hour in the fridge.
3.Heat half oil in large wok or frying pan on high. Stir-fly beef in 2 batches 1-2 minutes until browned, adding more oil between each batch.
4.Spoon beef over cooked rice noodles to serve. Accompany with cucumber spears and lime wedges.
