1.Place garlic, vinegar, rind and oil in screw-top jar, shake well. Add chives.
Rinse preserved lemon under cold water; cut flesh away and discard it, using only the rind. Vinaigrette is a cold sauce made from a mixture of vinegar, oil, pepper and salt, to which various flavourings may be added. Used primarily for dressing salad leaves. The choice of oil and vinegar is made according to the nature of the salad being dressed. Ratio for vinaigrette’s using vinegar is 1: 3 parts oil.
