Method
1.Preheat oven to 200°C (180°C fan forced).
2.Spray lamb with oil, sprinkle with herbs. Place lamb in large oiled baking dish.
3.Roast lamb, uncovered, about 15 minutes. Place tomatoes around lamb, drizzle with vinegar. Roast a further 10 minutes or until lamb is cooked as desired. Cover, stand 10 minutes before slicing.
Roasting cherry tomatoes intensifies the flavour and transforms them into a lovely accompaniment to the lamb.
