1.Preheat oven to 200°C (fanbake). Mix the bacon, garlic, rosemary, parsley and a little black pepper in a small bowl. Season the meaty part of the racks then spread the bacon mixture over the top.
2.Mix together parmesan, breadcrumbs and butter. Spread this over the top of the bacon. Put the racks, crumb-side up, in a shallow roasting tin lined with baking paper. Roast for around 20-25 minutes, but check them after 18 or so minutes to see if they are done to your liking; do not over-cook.
3.Transfer racks to a board and rest them uncovered for 5 minutes. Carefully slice into cutlets. Drizzle a little balsamic onto a heated platter and arrange the cutlets on top. Serve immediately.
