1.Preheat a chargrill on high. Brush cutlets with melted butter or oil and season well. Cook for 2-3 minutes each side, until cooked to your liking.
2.Whisk mint and cayenne pepper into warm Hollandaise Sauce.
3.Toss together hot potato halves and parsley.
4.Serve cutlets with potatoes and drizzle with Mint Hollandaise.
