Method

1.In a frying pan, heat half oil on medium. Saute onion and garlic 3-4 minutes, until tender. Add spices and cook 1 minute, stirring.
2.Spoon half onion mixture into a large bowl. Add mince, breadcrumbs, apricots and mint. Season to taste and mix well. Roll level tablespoons of mixture into balls.
3.Heat remaining oil in same pan on medium. Cook meatballs 6-8 minutes, turning on all sides, until evenly browned.
4.Add remaining onion mixture to pan with tomatoes. Bring to simmer and cook 4-5 minutes, until meatballs cook through completely.
5.Meanwhile, prepare couscous following packet instructions. Transfer to a large dish and mix cucumber through. Season to taste.Top with meatballs. Accompany with lemon wedges.
