1.Preheat oven to 220°C (200°C fan-forced). Place pumpkin and red onion, in a single layer, on a baking-paper-lined oven tray. Drizzle with 1 tablespoon of the oil. Season. Bake for about 20 minutes or until tender.
2.Meanwhile, blend or process green onion, garlic, spices, thyme, honey and remaining oil until smooth.
3.Halve chicken crossways. Cook chicken on heated oiled grill plate (or grill or barbecue), brushing with honey mixture, until cooked through.
4.Place pumpkin and red onion on serving plates. Top with chicken; season to taste, sprinkle over coriander leaves. Serve with remaining honey mixture, if you like.
Accompany chicken with a Greek-style yoghurt, if you like.
