1.Preheat oven to 180°C (160°C fan-forced). Grease two 12-hole round-based patty pans.
2.Cut out 24 x 6cm stars and 24 x 1cm stars from pastry.
3.Place large stars into pans; drop level teaspoons of jam into pastry cases. Place small stars on patty pan in spaces between the holes.
4.Bake about 15 minutes. Remove tarts from pans onto wire rack while still hot; place small pastry stars on top of jam. Cool.
Tarts can be made one day ahead; store, in a single layer, in an airtight container. The stars of the day can act all grown-up like their favourite celebrity with a flute of pink fizz in one hand and a canapé in the other. As well, there’s the kids’ all-time favourite jam tarts made into star shapes.
