Ingredients

Method

1.Preheat oven to 200°C or 180°C Fan. Grease and line biscuit trays with baking paper.
2.Using an electric mixer, beat butter and both sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Mix together dry ingredients, then add to creamed mixture. Beat until combined.
3.Turn onto a lightly floured surface and knead lightly until dough comes together. Cover with plastic wrap and refrigerate for 30 mins.
4.Divide dough in half. Roll one piece between two sheets of baking paper to a 25cm x 30cm rectangle. Remove top piece of baking paper. Spread dough with half of jam. Starting from long side, roll up dough to form a log. Repeat with remaining dough and jam. Chill until firm.
5.Cut each log into 5mm slices. Place on prepared trays. Bake for 10 mins, until firm. Cool on trays.

You can freeze the dough for up to 3 months. Thaw at room temperature and continue recipe from step 5. Xanthan gum is available in the health food section of some supermarkets and at health food stores.
