Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced). Grease a shallow, 1.75-litre (7-cup), rectangular ovenproof dish. Place dish on a baking tray.
2.Scatter half the ham and half the tomato over base of prepared dish. Arrange bruschettina over tomato mixture.
3.Whisk eggs, cream and pesto in a jug. Season with salt. Pour half the egg mixture over bread in dish. Stand 5 minutes. Scatter remaining ham and tomato over bread, then pour over remaining egg mixture.
4.Sprinkle olives and parmesan over bread. Bake 30-35 minutes, or until just set. Remove from oven. Stand 5 minutes. Serve with salad.

You could use sun-dried tomato tapenade in place of the pesto, if preferred.
