Method
1.Cook sausages in heated oiled large saucepan until browned. Remove from pan; cut in half lengthways.
2.Add undrained tomatoes and â…“ cup (80ml) water to same pan; bring to the boil. Return sausages to pan with antipasto vegetables; simmer, covered, 15 minutes.
3.Add beans to pan; simmer, uncovered, about 10 minutes or until thickened slightly.
4.Remove from heat, stir in half the basil; serve topped with remaining basil.
We used semi-dried tomatoes, marinated artichokes, grilled eggplant and red capsicum for the antipasto mix; however, any combination of vegetables can be used.
