Baked meatballs
1.Place mince, breadcrumbs, egg and chopped parsley in a large bowl. Using hands, mix well to combine. Shape mixture into 12 balls. Place on a plate; chill for 15 minutes.
2.Preheat oven to 220°C/200°C fan forced. Heat a large non-stick frying pan over moderately high heat. Cook and turn meatballs for 5-6 minutes or until browned all over. Place pasta sauce in a small saucepan; bring to the boil over moderate heat.
3.Place meatballs in a 1.5-litre (6-cup) ovenproof dish. Pour sauce over meatballs: sprinkle with mozzarella. Bake for 15 minutes or until melted and bubbly. Serve at once with vegies.
You could use a combination of minces, such as pork and veal. If you’re making these meatballs for kids, sneak in some extra vegies, like grated carrot, celery, mushrooms or zucchini. You can use these meatballs on pizza bases or in sandwiches. You can freeze uncooked meatballs for up to 3 months.
