1.In a large, deep frying pan, heat oil on medium. Sauté onion, garlic and ginger for 3-4 minutes until onion is tender.
2.Add mince and brown for 4-5 minutes, breaking up lumps when necessary.
3.Stir in curry paste, carrot and zucchini, followed by stock. Cook for 10 minutes, stirring occasionally.
4.Break baby cos into leaves. Divide mince mixture between lettuce cups and serve with rice, coriander, yoghurt, pappadums and mango chutney.
