Hummingbird slice with orange icing

Method

1.Preheat oven to 180°C (160°C fan-forced). Grease and line a 26x16cm (base measurement) slice pan with baking paper, extending paper at long sides for handles.
2.Sift flours and cinnamon into a large bowl. Stir in sugar and coconut, then drained pineapple, banana and combined eggs, oil and zest until combined.
3.Spread mixture in prepared pan. Bake for 40-45 minutes or until a skewer inserted at centre comes out clean. Cool for 15 minutes in pan: turn slice out onto wire rack to cool completely.
4.To make orange icing, sift icing sugar into a medium bowl. Add butter; beat until smooth, adding enough juice for a spreadable consistency. Spread icing over top of slice. Serve cut into pieces.

You can add ½ cup grated carrot to cake with banana. Replace sunflower oil with canola oil. Try lemon or lime juice instead.
