1.Cook noodles in large saucepan of boiling water until tender, drain.
2.Meanwhile, heat large non-stick saucepan over medium heat, cook paste, lime leaves and chilli, stirring, until fragrant. Add the water and stock, bring to the boil, stirring. Reduce heat, simmer, uncovered, 5 minutes.
3.Add carrot, capsicum, mushrooms, broccolini and snow peas to pan, simmer, uncovered, about 5 minutes or until vegetables are tender.
4.Stir in onion, juice and sauce, season to taste. Discard lime leaves and chilli. Divide noodles into serving bowls,; ladle soup over noodles, top with sprouts and herbs.
Reheat soup in a microwave oven on HIGH (100%) for about 1½ minutes, stirring halfway through heating.
