Method
1.Preheat oven to 180°C/160°C fan forced Grease and line a 26x16crn (base measurement) slice pan with baking paper.
2.Combine oats, flour, sugar, apricot, cranberry, nuts and pepitas in a large bowl.
3.Place butter and honey in a small saucepan over low heat. Cook and stir for 3-4 minutes or until melted. Cool slightly.
4.Whisk eggs in a medium bowl. Add cooled butter mixture to egg; stir until combined. Add egg mixture to oat mixture. Stir until well combined.
5.Spread mixture in prepared pan; smooth surface.
6.Bake for 30-35 minutes or until a skewer inserted at centre comes out clean. Remove from oven. Cool in pan (slice will firm). Cut slice into pieces to serve.
Piece 100g chocolate in a small zip-lock bag. Microwave on High (100%) in 30-second bursts. Snip a corner to form a piping bag. Drizzle over slice.
