Method

1.In a medium microwave-safe bowl, combine sherry, honey, garlic and oil. Microwave on high (100%) power for 30 seconds. Mix well.
2.Add prawns to marinade, tossing well to coat.
3.Thread 2 prawns onto each skewer, alternating with green onion pieces.
4.Preheat barbecue plate or large frying pan on high. Cook skewers for 1-2 minutes each side, until prawns are just cooked through.

A combination of prawns and scallops is also delicious. Don’t overcook shellfish as it becomes tough and dry.
