Ingredients

Method

1.Pat dry potatoes with paper towel.
2.Heat oil in a large saucepan or deep-fryer until a small piece of potato sizzles as soon as it is added (130-140°C).
3.Cook potatoes, in 3 batches, 5-6 minutes each batch, until they just start to colour. Drain on paper towel.
4.Cool 10 minutes. Reheat oil (180°C). Second- fry chips, in 2 batches, 3-4 minutes each, until crisp and golden. Drain on paper towel. Season.
