Method

1.Heat oil in a medium saucepan over moderate heat. Add onion and garlic; cook and stir for 5 minutes or until soft. Add bacon; cook and stir for 2 minutes or until lightly browned and cooked.
2.Add tomato paste, tomato, sugar and beans; stir to combine. Bring to the boil; reduce heat to low. Simmer, stirring occasionally, for 8 minutes or until sauce thickens. Serve warm with toast and avocado.

Serve with poached or fried eggs. You can make baked beans up to 3 days ahead. Cover, then refrigerate.
