Method
1.Combine chicken in a bowl with parsley, oil and garlic. Chill for 20 minutes.
2.Preheat a chargrill on high. Thread chicken, capsicum, onion and lemon onto skewers. Spray with oil and season to taste.
3.Char-grill kebabs for 8-10 minutes, turning, until chicken is cooked through.
4.Meanwhile, place sliced potatoes on a tray. Spray with oil and season to taste. Char-grill for 4-5 minutes each side, until golden and crisp.
5.To make dressing, whisk together all ingredients in a small bowl.
6.Drizzle dressing over kebabs. Serve with potatoes.
If preferred, these may be cooked in a preheated oven, at 180°C, for 15-20 minutes.
