Method
1.Preheat oven to 200°C. Oil oven trays and line with baking paper.
2.Sift dry ingredients into a medium bowl and rub in butter. Stir in herbs, cheese and egg yolk; press mixture firmly together with hand. On a lightly floured surface, knead until smooth. Cover and refrigerate 30 minutes.
3.Roll dough between sheets of baking paper until 3mm thick. Cut into 50 x 4cm squares, then cut each in half to make triangles. Place triangles about 1cm apart on oven trays.
4.Bake triangles about 10 minutes or until browned lightly. Cool on trays.
