Method
1.Heat oil in a large frying pan over moderate heat. Cook and stir mushroom for 4-5 minutes or until light golden. Transfer to a heatproof plate.
2.Add ham to pan; cook and stir for 2 minutes. Remove from heat. Stir in cream and milk until combined.
3.Return pan to heat. Bring to the boil, stirring. Add peas. Reduce heat; simmer, stirring occasionally, for 2 minutes or until sauce thickens. Stir in mushroom, half the parmesan, half the onion and hot pasta. Season with salt and pepper.
4.Spoon pasta into bowls. Top with remaining parmesan and onion. Serve at once.
Budget tip: Replace parmesan with grated cheddar cheese; flavour will vary. Instead of peas, try chopped tomato. You can use any tortellini variety.
