Method

Quesadilla mummies

1.Preheat oven to hot, 200°C.
2.Line two oven trays with baking paper. Slice 4 mini tortillas into 1cm strips.
3.Spray strips with olive oil. Spread 6 remaining whole tortillas evenly with sweet chilli sauce and sprinkle with grated tasty cheese.
4.Arrange tortilla strips on top to form bandages, trimming if needed. Transfer to trays. Bake for 8-10 minutes until golden and cheese has melted. Cool slightly.

Guacamole

5.In a bowl, roughly mash avocados with a fork. Stir in seeded, diced tomato, small red onion, chopped coriander and lime juice. Season.

Garnish

6.Spoon 1/2 teaspoon of sour cream onto each mummy to form eyes. Place small pieces of black olive for pupils. Serve with guacamole and extra sweet chilli sauce.
  • You could also use a cookie cutter to cut out smaller rounds of tortilla to make more bite-size mummies.
