1.Heat half oil in a saucepan on high. Fry sausages 2-3 minutes, turning, until browned all over. Slice and set aside.
2.Add remaining oil to pan. Sauté onion, celery, capsicum and garlic 3-4 minutes. Add kumara and cayenne. Cook for 1 minute. Add flour to pan. Cook, stirring, until well browned
3.Gradually stir in stock until smooth. Add tomatoes, rice and bay leaves. Bring to boil, stirring. Reduce heat to low. Simmer for 15 minutes.
4.Return sausages to pan with prawns and okra. Simmer for 4-5 minutes. Sprinkle with parsley. Serve with lime wedges.
