Method

1.Using a fork, combine olive oil spread, zest and cumin seeds in a bowl. Season. Heat oil in a frying pan over moderately high heat. Add chicken; cook for 4 minutes each side or until browned and cooked through. Season.
2.Meanwhile, place couscous and half the spread mixture in a heatproof bowl. Stir in 1 1/2 cups boiling water. Cover with plastic food wrap. Set aside for 5 minutes or until liquid is absorbed. Using a fork, fluff and separate grains. Stir in lemon juice and parsley.
3.Divide couscous among serving plates; top with chicken and remaining spread mixture. Serve sprinkled with extra parsley leaves.

Use 4 chicken breast fillets instead of thigh fillets. You could also swap mustard seeds for cumin.
