Method

1.Combine flour and sugar in a large bowl. Make a well at centre. Pour buttermilk and egg into well, then stir to make a smooth batter. Season.
2.Preheat an oven-grill to high. Brush a large frying pan with butter to grease. Place over moderate heat. For each pikelet, spoon 2 tablespoons of batter into pan. Cook 3 pikelets at a time for 1 minute each side or until golden brown and cooked. Transfer to a baking tray. Repeat to make 12 pikelets in total, greasing pan with butter between batches.
3.Top pikelets with cheese. Place under grill, then cook for 1 minute or until cheese melts slightly. Serve topped with thyme.

Goat cheese has a distinctive taste. If you’re not a fan, you can use fresh ricotta. Buttermilk is slightly soured milk. If unavailable you can make your own by stirring 1 tablespoon lemon juice into 1 cup skim milk and letting it stand for 5 minutes to thicken slightly.
