Method
1.Cook penne in a large saucepan of boiling water according to packet directions. Drain, reserving 1/2 cup of cooking liquid.
2.Heat half of the oil in a frying pan on medium. Cook bacon 3 minutes, until golden. Add garlic and chilli. Cook 1 minute, until fragrant. Add lemon rind and juice. Simmer 1 minute.
3.Toss through penne with reserved cooking liquid, remaining oil and spinach, until spinach just wilts. Season to taste. Top with parmesan, to serve.
